Description

Tender chicken breasts with sautéed mushrooms and creamy Asiago cheese, creating a comforting and flavorful dish perfect for any weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 1 cup Asiago cheese, grated
  • 2 cups spinach (optional)
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, and add them to the skillet. Cook until browned on both sides and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  2. In the same skillet, add garlic and mushrooms. Sauté until mushrooms are tender.
  3. Pour in the chicken broth and bring to a simmer. Add spinach if using, and stir until it wilts.
  4. Return the chicken to the skillet, sprinkle with Asiago cheese, cover, and let it cook for an additional 2-3 minutes until the cheese is melted.
  5. Serve warm.

To enhance flavor, let the chicken rest after cooking for tender results. Adding a bit of cream can create a richer sauce.
