Tender chicken breasts with sautéed mushrooms and creamy Asiago cheese, creating a comforting and flavorful dish perfect for any weeknight dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz mushrooms, sliced
- 1 cup Asiago cheese, grated
- 2 cups spinach (optional)
- 2 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, and add them to the skillet. Cook until browned on both sides and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
- In the same skillet, add garlic and mushrooms. Sauté until mushrooms are tender.
- Pour in the chicken broth and bring to a simmer. Add spinach if using, and stir until it wilts.
- Return the chicken to the skillet, sprinkle with Asiago cheese, cover, and let it cook for an additional 2-3 minutes until the cheese is melted.
- Serve warm.
Notes
To enhance flavor, let the chicken rest after cooking for tender results. Adding a bit of cream can create a richer sauce.
