Description

A refreshing and colorful salad from Nice, France, featuring mixed greens, fresh vegetables, and protein-rich tuna and hard-boiled eggs.


Ingredients

  • Mixed greens
  • Cherry tomatoes
  • Green beans
  • Potatoes
  • Hard-boiled eggs
  • Tuna (canned or fresh)
  • Black olives
  • Red onion
  • Olive oil
  • Lemon juice
  • Dijon mustard
  • Salt
  • Pepper


Instructions

  1. Boil potatoes until tender, then chop and set aside.
  2. Blanch green beans in boiling water for a couple of minutes, then cool in ice water.
  3. Arrange mixed greens on a platter.
  4. Top with cherry tomatoes, chopped boiled potatoes, green beans, quartered hard-boiled eggs, tuna, black olives, and sliced red onion.
  5. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make the vinaigrette.
  6. Drizzle the vinaigrette over the salad and toss lightly before serving.

Notes

For best results, use the freshest ingredients possible and adjust vinaigrette acidity to taste.
