Ingredients
- Mixed greens
- Cherry tomatoes
- Green beans
- Potatoes
- Hard-boiled eggs
- Tuna (canned or fresh)
- Black olives
- Red onion
- Olive oil
- Lemon juice
- Dijon mustard

Instructions
- Boil potatoes until tender, then chop and set aside.
- Blanch green beans in boiling water for a couple of minutes, then cool in ice water.
- Arrange mixed greens on a platter.
- Top with cherry tomatoes, chopped boiled potatoes, green beans, quartered hard-boiled eggs, tuna, black olives, and sliced red onion.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make the vinaigrette.
- Drizzle the vinaigrette over the salad and toss lightly before serving.
