Description
A comforting No-Peek Chicken and Rice Casserole that combines tender chicken, creamy soups, and flavorful rice for a fulfilling family meal.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 cups Minute Rice (Brown)
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can water (use one of the soup cans)
- 1 tablespoon butter
- 1 envelope Lipton onion soup mix
Instructions
- Generously butter a 9×13 baking pan with 1 tablespoon of butter.
- In a medium bowl, mix together the cream of mushroom soup, cream of chicken soup, one can of water, and Minute rice until well combined.
- Pour the soup and rice mixture into the buttered baking pan.
- Arrange the boneless, skinless chicken breasts on top of the rice mixture.
- Sprinkle the Lipton onion soup mix evenly over the chicken breasts.
- Cover the baking pan with foil and place it in a preheated oven at 350°F (175°C).
- Bake for approximately 60 to 90 minutes, or until the chicken is cooked through and the rice is tender.
Notes
Consider marinating the chicken beforehand with simple spices for added flavor. You can also add frozen peas or diced carrots to the casserole for extra nutrition.
