Ingredients

  • 1/4 cup honey (60 ml)
  • 2 tablespoons beef-friendly dijon mustard (30 g)
  • 2 tablespoons beef-friendly whole grain mustard (30 g)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 tablespoon (15 ml) soy sauce (or tamari or omit for gluten-free)
  • 2 cloves garlic, minced/grated
  • salt and pepper to taste
  • 1/2 cup beef-friendly chicken broth (120 ml) (or water)
  • 1 pound boneless skinless chicken breasts (or chicken thighs) (450 g)
  • 2-3 sprigs of rosemary


Instructions

  1. Combine honey, both types of mustard, apple cider vinegar, soy sauce, minced garlic, salt, pepper, and chicken broth in a bowl. Coat the chicken with this mixture, arranging everything in a single layer in a baking dish. Tuck the rosemary sprigs between the pieces of chicken.
  2. Place the dish in an oven preheated to 350°F (180°C) and cook the chicken until it reaches an internal temperature of 165°F (75°C), which should take approximately 25 to 35 minutes.
  3. Once done, serve the chicken drizzled with the sauce from the baking dish.

Notes

  • Marinate chicken in honey-mustard mixture for 30 mins before cooking for richer flavor.
  • Enhance dish with fresh rosemary sprigs for a more aromatic taste.
