Description

Ingredients

  • 1 lb chicken breast, cut into pieces
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken pieces with salt and pepper, then brown them on all sides.
  3. Add minced garlic and sauté for a minute until fragrant.
  4. Incorporate chopped bell pepper, zucchini, and cherry tomatoes, and sauté until tender.
  5. Pour in chicken broth, bring to a boil.
  6. Add orzo and balsamic vinegar, stirring to combine.
  7. Reduce heat and simmer for 10-12 minutes until orzo is al dente, stirring occasionally.
