  • 1 teaspoon (5 ml) garlic powder
  • 1 lb (454 g) chicken thighs, boneless
  • 1 lb (454 g) sweet potatoes, peeled and cubed
  • 1/3 cup (80 ml) dried cranberries
  • 1/3 cup (80 ml) pecans
  • 2 teaspoon (10 ml) fresh thyme


Instructions

  1. Set your oven to 375°F to warm up.
  2. In a big mixing bowl, combine olive oil, honey, sea salt, pepper, Italian herbs, and garlic powder.
  3. Toss in the chicken thighs, cubed sweet potatoes, pecans, and dried cranberries, and mix thoroughly to ensure everything is well-coated.
