- 1 teaspoon (5 ml) garlic powder
- 1 lb (454 g) chicken thighs, boneless
- 1 lb (454 g) sweet potatoes, peeled and cubed
- 1/3 cup (80 ml) dried cranberries
- 1/3 cup (80 ml) pecans
- 2 teaspoon (10 ml) fresh thyme
Instructions
- Set your oven to 375°F to warm up.
- In a big mixing bowl, combine olive oil, honey, sea salt, pepper, Italian herbs, and garlic powder.
- Toss in the chicken thighs, cubed sweet potatoes, pecans, and dried cranberries, and mix thoroughly to ensure everything is well-coated.
- Place the chicken thighs neatly in a skillet, and scatter the remaining ingredients around them.
- Cook in the oven for about 30 minutes, or until the chicken is fully cooked and the sweet potatoes can be easily pierced with a fork.
- Garnish with fresh thyme before serving.
