Ingredients
- 6 chicken drumsticks
- 3 potatoes, diced
- 2 carrots, sliced

- Salt & pepper to taste
- 1 tsp thyme
- 1 tsp rosemary
Instructions
- Preheat the oven to 400°F (200°C).
- Toss all ingredients together in a bowl, ensuring that the chicken and veggies are well coated with olive oil, salt, and herbs.
- Spread the mixture on a baking sheet in a single layer for optimal roasting.
- Roast for 35–40 minutes until the chicken turns golden brown and the vegetables become tender.
