Ingredients
- 1 1/2 lb (650g) chicken breasts, diced
- 4 tablespoons butter
- 1 teaspoon paprika
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 teaspoons Italian seasoning
- Salt and fresh cracked pepper to taste
- 2 1/2 cups (750ml) chicken stock
- 1 cup white rice (long grain or basmati)
- 1/2 cup (125ml) heavy cream
- 1/4 cup grated Parmesan
- Parsley for garnish, optional
Instructions
- Season the diced chicken breasts with salt, pepper, paprika, and Italian seasoning.
- Melt 2 tablespoons of butter in a large skillet over medium heat; add the diced onion and sauté until translucent.
- Mix in the minced garlic, stirring briefly until fragrant.
- Add the remaining 2 tablespoons of butter and the seasoned chicken, lightly browning the chicken on all sides.
- Stir in rinsed rice and toast for about a minute.
- Pour in the chicken stock, bring to a boil, cover, and reduce to low simmer for 15-18 minutes.
- Incorporate heavy cream and Parmesan cheese, simmer for an additional 1-2 minutes.
- Adjust seasoning, cover, and let rest for 2 minutes.
- Garnish with parsley before serving hot.
Notes
Rinse the rice before cooking to avoid a gummy texture. Let the dish sit covered after cooking to enhance the flavors.
