Ingredients
- 2 tsp (10 ml) fresh minced garlic
- 1 tsp (5 ml) fresh minced ginger
- 3 tbsp (45 ml) soy sauce
- 1 tbsp (15 ml) rice vinegar
- 2 tsp (10 ml) toasted sesame oil
- 2 tbsp (30 ml) red curry paste
- 120 ml coconut milk or cream
- 120 ml water
- 5 cups (1.2 kg) chopped bok choy
- 20 frozen chicken and vegetable or beef and vegetable dumplings
- 3 tbsp (45 ml) chopped parsley
- 1/4 cup (60 ml) thinly sliced green onion
- 2 tsp (10 ml) toasted sesame seeds
- chili crunch oil
Instructions
- Set your oven to 375°F (190°C) to preheat.
- In a casserole dish, combine the garlic, ginger, soy sauce, rice vinegar, sesame oil, curry paste, coconut milk, and water, mixing thoroughly. Incorporate the bok choy by gently tossing it in the mixture. Arrange the dumplings on top and cover the dish with foil.
- Place the dish in the oven and bake until the centers of the dumplings are warm, roughly 25 minutes.
- Distribute the dumplings and bok choy onto serving plates, spooning the sauce from the dish over them. Garnish each portion with parsley, green onions, sesame seeds, and a drizzle of chili crunch oil.

- Marinate dumplings in sauce for 30 mins for a richer flavor before baking.
