A quick and flavorful one-pan hibachi chicken meal that brings restaurant-style dining to your home with marinated chicken thighs and colorful mixed vegetables.
Ingredients
- 1 pound boneless, skinless chicken thighs
- 2 cups cooked rice
- 1 cup mixed vegetables (peas, carrots, and bell peppers)
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Spicy mayo (for serving)
Instructions
- Heat vegetable oil and sesame oil in a large skillet over medium-high heat.
- Add minced garlic and ginger, sauté for 1 minute.
- Add chicken thighs and cook until browned and cooked through, about 7-10 minutes.
- Add mixed vegetables and stir-fry for another 3-5 minutes.
- Stir in the cooked rice and soy sauce, mix to combine, and heat through.
- Serve hot with spicy mayo on the side.
Notes
For a deeper flavor, marinate chicken thighs in soy sauce, ginger, and garlic for at least 30 minutes before cooking.
