Description

A comforting one-pan meal featuring tender chicken thighs coated in a sweet and savory honey garlic glaze, served over fluffy rice.


Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup white rice (uncooked)
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 3 tablespoons unsalted butter
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste
  • Optional garnish: 3 slices lemon


Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and sear the chicken on both sides until golden brown and nearly cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium, add unsalted butter and minced garlic, cooking until fragrant.
  4. Stir in honey and soy sauce, creating a sticky glaze.
  5. Add uncooked rice to the skillet, stirring to coat with the sauce.
  6. Pour in chicken broth, mixing briefly.
  7. Nestle chicken thighs back into the pan, cover, and reduce heat to low.
  8. Simmer for 18 to 22 minutes, or until rice is tender and liquid is absorbed.
  9. Uncover, fluff rice with a fork, sprinkle with parsley, and garnish with lemon slices if desired. Serve warm.

Notes

Use high-quality honey for better sweetness. You can add vegetables like peas or carrots for added color and nutrition.
