Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet over medium-high heat, then add garlic and sauté until fragrant.
- Season the chicken breasts with salt and pepper, then add to the skillet and sear until golden brown on both sides.
- Pour balsamic vinegar over the chicken and bring to a simmer.
- Add cherry tomatoes around the chicken.
- Transfer the skillet to the oven and bake for 20 minutes.
- Remove from the oven, sprinkle with mozzarella cheese, and return to the oven until cheese is melted.
- Garnish with fresh basil before serving.

Ensure chicken is at room temperature for better browning. Use fresh basil for garnish to brighten the dish.
