Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella cheese, shredded
- Fresh basil leaves, for garnish
- Salt and pepper, to taste
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, adding them to the skillet. Cook until browned, about 5-7 minutes on each side.
- Pour in the balsamic vinegar and bring to a simmer.
- Add the cherry tomatoes and reduce the heat to low. Cover and cook for another 10 minutes or until the chicken is cooked through.
- Sprinkle mozzarella cheese on top and cover until melted.
- Serve hot, garnished with fresh basil.
