Description

A simple and flavorful one-pan chicken dish featuring juicy chicken breasts, sweet cherry tomatoes, and a tangy balsamic sauce topped with melted mozzarella.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • Fresh basil leaves, for garnish
  • Salt and pepper, to taste


Instructions

  1. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, adding them to the skillet. Cook until browned, about 5-7 minutes on each side.
  2. Pour in the balsamic vinegar and bring to a simmer.
  3. Add the cherry tomatoes and reduce the heat to low. Cover and cook for another 10 minutes or until the chicken is cooked through.
  4. Sprinkle mozzarella cheese on top and cover until melted.
  5. Serve hot, garnished with fresh basil.
