A vibrant and comforting dish that brings together the flavors of the Mediterranean with chicken and rice infused with aromatic spices.
Ingredients
- 2 chicken breasts (sliced into 4 pieces)
- 1/2 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp ground black pepper
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp paprika
- 1/2 tsp turmeric powder
- 2 tsp lemon juice
- 2 tsp olive oil
- 1 onion (finely chopped)
- 1 tsp garlic (finely chopped)
- 1 cup rice (rinsed and soaked in water for 30 minutes)
- 2 and 1/4 cups low-sodium chicken broth
- 1 bay leaf
- 1-inch cinnamon stick
- 1/2 cup frozen peas
Instructions
- Season the sliced chicken breasts with a mix of thyme, oregano, black pepper, cumin, garlic powder, salt, paprika, and turmeric.
- Heat olive oil in a large pan over medium heat and add the seasoned chicken, cooking until golden brown on both sides.
- Remove the chicken and sauté chopped onion until translucent, then add garlic.
- Stir in the soaked rice and toast for a minute.
- Add chicken broth, bay leaf, and cinnamon stick, scraping the bottom of the pan.
- Return chicken to the pan, bring to a simmer, cover, and cook for about 18-20 minutes until rice absorbs liquid.
- Add frozen peas in the last few minutes of cooking and squeeze in lemon juice before serving.
- Remove bay leaf and cinnamon stick, fluff rice, and serve.
Notes
For a flavorful edge, consider marinating the chicken in the spice blend if time permits.
