Description

A vibrant and comforting dish that brings together the flavors of the Mediterranean with chicken and rice infused with aromatic spices.


Ingredients

  • 2 chicken breasts (sliced into 4 pieces)
  • 1/2 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp ground black pepper
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp turmeric powder
  • 2 tsp lemon juice
  • 2 tsp olive oil
  • 1 onion (finely chopped)
  • 1 tsp garlic (finely chopped)
  • 1 cup rice (rinsed and soaked in water for 30 minutes)
  • 2 and 1/4 cups low-sodium chicken broth
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 1/2 cup frozen peas


Instructions

  1. Season the sliced chicken breasts with a mix of thyme, oregano, black pepper, cumin, garlic powder, salt, paprika, and turmeric.
  2. Heat olive oil in a large pan over medium heat and add the seasoned chicken, cooking until golden brown on both sides.
  3. Remove the chicken and sauté chopped onion until translucent, then add garlic.
  4. Stir in the soaked rice and toast for a minute.
  5. Add chicken broth, bay leaf, and cinnamon stick, scraping the bottom of the pan.
  6. Return chicken to the pan, bring to a simmer, cover, and cook for about 18-20 minutes until rice absorbs liquid.
  7. Add frozen peas in the last few minutes of cooking and squeeze in lemon juice before serving.
  8. Remove bay leaf and cinnamon stick, fluff rice, and serve.

Notes

For a flavorful edge, consider marinating the chicken in the spice blend if time permits.
