Ingredients

  • 1 Tbsp olive oil
  • 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 red bell pepper, trimmed and cut into 1-inch pieces
  • 2 cups fresh pineapple, cubed
  • 1/4 cup lower sodium soy sauce
  • 1/4 cup pineapple juice
  • 1 tsp sesame oil
  • 3 Tbsp honey
  • 2 tsp fresh grated ginger
  • Optional garnish: green onions and sesame seeds


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chicken pieces, seasoning with salt and pepper, and sauté until lightly browned, about 4 to 5 minutes.
  3. Mix in the minced garlic and cook for about 30 seconds.
  4. Toss in the broccoli florets, red bell pepper, and cubed pineapple.
  5. Cook for an additional 5 minutes, allowing the vegetables to soften and chicken to cook through.
  6. Whisk together soy sauce, pineapple juice, sesame oil, honey, and ginger in a small bowl.
  7. Pour the sauce over the chicken and vegetables, bringing it to a gentle simmer.
  8. Finish by adding chopped green onions and sesame seeds before serving.

For a vegetarian option, substitute chicken with tofu and press before cooking.
