Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 cup (240 ml) onion, chopped (about 1 medium onion)
  • 2 cups (480 ml) cooked chicken, shredded (about 280 grams)
  • 1 cup barbecue sauce (240 ml)
  • 1 cup (240 ml) frozen mixed vegetables (about 150 grams)
  • 1 teaspoon (5 ml) garlic powder (5 grams)
  • 1 teaspoon (5 ml) onion powder (5 grams)
  • 1/2 teaspoon (3 ml) smoked paprika (2 grams)
  • 1/4 teaspoon (1 ml) black pepper (1 gram)
  • 1 cup chicken broth (240 ml)
  • 1 cup (240 ml) all-purpose flour (120 grams)
  • 1/4 cup (60 ml) beef suet, cubed (60 grams)
  • 1/4 cup cold water (60 ml)
  • 1/2 teaspoon (3 ml) salt (3 grams)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe pot over medium heat.
  3. Add chopped onion and cook until soft, about 5 minutes.
  4. Stir in shredded chicken and barbecue sauce.
  5. Add frozen mixed vegetables, garlic powder, onion powder, smoked paprika, and black pepper.
  6. Pour in chicken broth and stir to combine.
  7. In a bowl, mix flour and salt.
  8. Add cubed cold butter to the flour mixture.
  9. Use a pastry cutter or fingers to blend until crumbly.
  10. Gradually add cold water, mixing until a dough forms.
  11. Roll out dough on a floured surface to fit the pot.
  12. Place dough over the chicken mixture in the pot.
  13. Trim excess dough and press edges to seal.
  14. Cut slits in the dough for steam to escape.
  15. Bake in the preheated oven for 25–30 minutes, until crust is golden.
