Description

A comforting and flavorful dish combining tender chicken and orzo, all cooked in one pot for easy cleanup. Perfect for busy weeknights or family gatherings.


Ingredients

  • 1 pound chicken thighs or breasts, diced
  • 1 cup orzo pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. Heat some oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the diced chicken and cook until browned on all sides.
  5. Pour in the chicken broth and diced tomatoes, then bring to a simmer.
  6. Add the orzo, oregano, salt, and pepper. Cover and cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
  7. Serve hot, garnished with fresh parsley.

Notes

For added flavor, season the chicken beforehand and stir the orzo occasionally while cooking. You can add other vegetables for more nutrition.
