A comforting and flavorful dish combining tender chicken and orzo, all cooked in one pot for easy cleanup. Perfect for busy weeknights or family gatherings.
Ingredients
- 1 pound chicken thighs or breasts, diced
- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Heat some oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent.
- Stir in the garlic and cook for an additional minute.
- Add the diced chicken and cook until browned on all sides.
- Pour in the chicken broth and diced tomatoes, then bring to a simmer.
- Add the orzo, oregano, salt, and pepper. Cover and cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Serve hot, garnished with fresh parsley.
Notes
For added flavor, season the chicken beforehand and stir the orzo occasionally while cooking. You can add other vegetables for more nutrition.
