Ingredients

  • 4 tablespoons vegetable oil (60 ml)
  • 1 cup sliced carrots (140 g)
  • 4 oz (115 g) mushrooms, sliced
  • 1 large or 2 small ribs celery, thinly sliced
  • 1 large shallot or small onion, chopped
  • homemade seasoned salt and pepper
  • 2 cloves garlic, pressed or minced
  • 1 teaspoon (5 ml) poultry seasoning
  • pinch dried thyme
  • 3 tablespoons all-purpose flour (45 g)
  • 2 cups chicken broth (480 ml)
  • 1 cup milk, any kind, I use unsweetened almond milk (240 ml)
  • 12 oz (340 g) package halal-friendly gnocchi
  • 1-1/2 cups shredded chicken breast, ~1/2 lb pre-cooked (225 g)
  • 1/2 cup frozen peas (70 g)


Instructions

  1. Warm a large pot or Dutch oven over medium-high heat. Add vegetable oil and then include the carrots, mushrooms, celery, and shallots/onions. Cook until the mushrooms release their moisture and it evaporates, about 3-4 minutes. Add homemade seasoned salt and pepper, then continue cooking until the vegetables soften, adjusting the heat if needed, for an additional 6-7 minutes.
  2. Incorporate garlic, poultry seasoning, and a pinch of dried thyme, stirring until the garlic becomes highly aromatic, about 1-2 minutes.
  3. Dust the vegetables with flour, stir to coat them, and cook for 1 minute. Gradually pour in chicken broth while stirring to prevent any lumps, then add milk. Increase the heat to medium-high. Once the mixture reaches a simmer, stirring occasionally, add the gnocchi and mix. Reduce the heat to medium and let simmer, stirring often, until the gnocchi are tender, around 5-6 minutes.
  4. Mix in the shredded chicken and frozen peas, then taste and adjust seasoning with seasoned salt and/or pepper if needed. Serve by ladling into bowls.
