Ingredients

  • 5 Pounds (680 g) Boneless, Skinless Chicken Breast cut into cubes
  • 1 Teaspoon (5 ml) Paprika
  • 1/2 Teaspoon (3 ml) Cumin
  • 1 Teaspoon (5 ml) Kosher Salt
  • 1/2 Teaspoon (3 ml) Ground Black Pepper
  • 2 Tablespoon (30 ml) s Olive Oil
  • 1 Small Yellow Onion finely diced
  • 4-5 Cloves Garlic mashed
  • 2 1/2 Cup (600 ml) s Chicken Broth
  • 3 Teaspoon (15 ml) s Dijon Mustard
  • 1 Cup (240 ml) Orzo
  • 2 Large Handfuls Spinach
  • 1/2 Cup (120 ml) Coconut Milk or Heavy Cream
  • 3 Lemons (1 lemon zested, 2 lemons juiced, and 1 lemon cut thin into slices)
  • 3/4 Cup (180 ml) Parmesan Cheese freshly grated


Instructions

  1. To prepare this dish, begin by drying the chicken breasts with a paper towel, then cutting them into cubes. Combine them in a bowl with paprika, cumin, kosher salt, and black pepper, ensuring the chicken is thoroughly seasoned.
  2. Warm a skillet on the stove over medium heat and pour in the oil.
  3. Once the oil is heated, add the chicken cubes and cook for about 4-5 minutes until the edges begin to brown.
  4. Take the chicken out of the pan and place it aside.
  5. Pour another tablespoon of oil into the pan. Finely chop the onion, crush the garlic, and add them to the heated pan.
  6. Sauté the onion and garlic for 2-3 minutes, making sure to scrape the pan’s sides to prevent burning.
  7. Introduce the chicken broth and mustard to the mixture, stirring well, then add the orzo.
  8. Keep the pan uncovered and stir occasionally to prevent the orzo from sticking to the pan’s bottom.
  9. When the orzo is cooked, incorporate the spinach, coconut milk or cream, lemon zest, lemon juice, and parmesan cheese into the mixture.
  10. Mix everything together for roughly a minute until well combined and the spinach wilts.
  11. Taste and modify the seasoning with kosher salt and black pepper if necessary.
  12. Reintroduce the chicken to the pan, stirring until it blends with the orzo and cooks through. Depending on the orzo brand, it might require additional cooking time, which is fine!
  13. Once complete, serve and savor!
