Ingredients
- 1/4 cup (60 ml) of vegetable oil
- 1 pound (454 g) boneless skinless chicken breasts, cut into 1 inch chunks
- 1 teaspoon (5 ml) of sea salt plus lots of freshly ground black pepper
- 4 cloves of garlic, minced
- 2 cups (480 ml) of low-sodium chicken broth
- 1 cup (240 ml) of water
- 1/2 pound (227 g) of penne pasta, about two cups
- 1 lemon, zested and juiced; juiced lemon should yield about 1/4 cup (60 ml) of lemon juice
- 1 lemon, sliced for garnish
- 1 cup (100 g) of freshly shredded mozzarella cheese
- 1 cup (240 ml) of fresh basil leaves
Instructions
- Sprinkle the chicken pieces with a teaspoon of sea salt and plenty of freshly ground black pepper.
- Warm up the vegetable oil over medium-high heat and sear the chicken pieces until browned.
- Reduce the heat and introduce the minced garlic to the pan.
- Cook the garlic and chicken together for around one minute.
- Next, pour in the chicken broth, water, and penne pasta into the pan.
- Allow the mixture to reach a boil, then lower the heat to a gentle simmer.
- Cover the pan and let it cook on low heat for approximately fifteen minutes.
- Take off the cover and let it simmer for an additional five minutes, until the liquid reduces by half.
- Take the pan off the heat and mix in the lemon juice, lemon zest, fresh basil, and shredded mozzarella cheese.
- Taste and adjust with more salt and pepper if necessary, and decorate with lemon slices before serving.
