Ingredients

  • 1/4 cup (60 ml) of vegetable oil
  • 1 pound (454 g) boneless skinless chicken breasts, cut into 1 inch chunks
  • 1 teaspoon (5 ml) of sea salt plus lots of freshly ground black pepper
  • 4 cloves of garlic, minced
  • 2 cups (480 ml) of low-sodium chicken broth
  • 1 cup (240 ml) of water
  • 1/2 pound (227 g) of penne pasta, about two cups
  • 1 lemon, zested and juiced; juiced lemon should yield about 1/4 cup (60 ml) of lemon juice
  • 1 lemon, sliced for garnish
  • 1 cup (100 g) of freshly shredded mozzarella cheese
  • 1 cup (240 ml) of fresh basil leaves


Instructions

  1. Sprinkle the chicken pieces with a teaspoon of sea salt and plenty of freshly ground black pepper.
  2. Warm up the vegetable oil over medium-high heat and sear the chicken pieces until browned.
  3. Reduce the heat and introduce the minced garlic to the pan.
  4. Cook the garlic and chicken together for around one minute.
  5. Next, pour in the chicken broth, water, and penne pasta into the pan.
  6. Allow the mixture to reach a boil, then lower the heat to a gentle simmer.
  7. Cover the pan and let it cook on low heat for approximately fifteen minutes.
  8. Take off the cover and let it simmer for an additional five minutes, until the liquid reduces by half.
  9. Take the pan off the heat and mix in the lemon juice, lemon zest, fresh basil, and shredded mozzarella cheese.
  10. Taste and adjust with more salt and pepper if necessary, and decorate with lemon slices before serving.
