Ingredients
- 2 cups pasta
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes, with juice
- 1 cup chicken broth
- 1 tablespoon taco seasoning
- 1 cup corn
- 1 cup heavy cream
- 1 cup shredded cheese
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the onion, garlic, and bell pepper; cook until softened.
- Add the diced tomatoes, chicken broth, taco seasoning, corn, and pasta.
- Bring to a boil, then reduce heat to low and cover.
