Ingredients
- 4 boneless skinless chicken breasts (or thighs) (680 g)
- salt and pepper
- 240 ml chicken broth
- 15 ml minced garlic
- 5 ml red pepper flakes
- 5 ml dried thyme
- 30 ml olive oil
- 225 g baby bella (cremini) mushrooms, sliced
- 80 ml finely diced shallots (or red onions)
- 30 g butter
- 60 ml coconut cream
- 30 ml chopped parsley (or basil)
Instructions
- Use a meat mallet to flatten the chicken breasts or thighs to a thickness of ½ inch. Season both sides lightly with salt and pepper.
- In a measuring cup or small bowl, mix together the chicken broth, minced garlic, red pepper flakes, and dried thyme.
- Set the oven rack in the lower third and preheat the oven to 375ºF.
- Warm up 1 tablespoon of olive oil in an oven-proof skillet on medium-high heat. Add the mushrooms and cook them for 3-4 minutes until they are browned on both sides, stirring occasionally. Move them to a large plate (ensure there’s enough space for the chicken as well).
- Pour the remaining tablespoon of oil into the skillet and keep the heat on medium-high. Place the chicken in the skillet and sear each side for 2-3 minutes, ensuring both sides are browned. It’s okay if the chicken isn’t fully cooked as it will finish cooking in the oven. Transfer the chicken to the plate with the mushrooms.
- Lower the heat to medium and add the shallots to the skillet along with the chicken broth mixture. Use a whisk to scrape the bottom of the skillet, loosening any browned bits. Let the sauce simmer and reduce for 8-10 minutes until about â…“ cup remains. This step is essential to thicken the sauce.
- Once the sauce is thickened, take the skillet off the heat and add the butter, whisking until it fully melts. Off the heat, stir in the coconut cream and mushrooms until well blended. Briefly return the skillet to the heat for 30 seconds, ensuring the sauce does not boil.
- Take it off the heat again, place the chicken back into the skillet, and pour the sauce over the chicken. Transfer the skillet to the oven and bake for 5-8 minutes until the chicken is thoroughly cooked.
- Finish by garnishing with chopped parsley or basil and serve hot.
