Description

A comforting dish of orecchiette pasta with savory Italian sausage and tender broccoli, perfect for busy weeknights.


Ingredients

  • 1 lb orecchiette pasta
  • 1 lb Italian sausage (sweet or spicy)
  • 16 oz broccoli florets
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 cups reserved pasta water
  • Grated Parmesan cheese (for topping)
  • Olive oil (for drizzling)
  • Red pepper flakes (optional)
  • Salt and pepper to taste


Instructions

  1. Cook orecchiette pasta according to package directions, removing from heat two minutes early.
  2. In a large skillet, heat olive oil over medium-high heat and cook sausage until browned, about 5-6 minutes.
  3. Add broccoli and minced garlic, cooking until broccoli softens, about 5-6 minutes.
  4. Drain the pasta, reserving 2 cups of pasta water. Add the pasta to the skillet along with ½ cup of the reserved water.
  5. Toss to combine, adding more reserved water if necessary to achieve a creamy sauce.
  6. Serve hot with grated Parmesan cheese, a drizzle of olive oil, and season as desired.

Notes

For a spicier version, add more red pepper flakes. This dish can be paired with a salad or garlic bread.
