Description

A delicious combination of marinated chicken breasts, crispy bacon, and melted cheese, this Alice Springs Chicken recreates the beloved Outback Steakhouse dish at home.


Ingredients

  • 4 chicken breast portions (skinless)
  • 6 slices bacon
  • 1/2 tablespoon chicken seasoning
  • 1/2 tablespoon onion powder
  • 1 teaspoon paprika powder
  • 2 cups Colby/Jack cheese (shredded)
  • 2 cups button mushrooms (sliced)
  • 1/4 cup honey
  • 1/3 cup yellow grainy mustard
  • 1/4 cup mayonnaise
  • 1 tablespoon corn syrup (optional)
  • 1/2 teaspoon onion flakes


Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.
  2. Mix chicken seasoning, onion powder, and paprika in a bowl and rub onto marinated chicken breasts.
  3. Heat a non-stick pan on low and combine honey, mustard, onion flakes, and mayonnaise until smooth.
  4. Add corn syrup if desired, and let it simmer lightly, setting aside.
  5. Brown the marinated chicken in the remaining bacon fat for 2-3 minutes on each side.
  6. Prepare a baking dish with aluminum foil and place the browned chicken inside.
  7. Slather the honey mustard sauce over each chicken piece.
  8. Layer sliced mushrooms, crumbled bacon, and shredded cheese on top.
  9. Bake in preheated oven at 350°F (175°C) for 10-12 minutes until cheese is melted and bubbly.

Notes

Use a meat thermometer to check that chicken reaches an internal temperature of 165°F (74°C). Adjust the ingredients to taste, and feel free to experiment with different mushrooms or seasonings.
