Ingredients

  • – 4 chicken breasts, 150-180g (5-6 oz) each
  • – 2 tsp (10 ml) olive oil
  • – 1 1/2 tbsp (23 ml) brown sugar
  • – 1 tsp (5 ml) paprika
  • – 1 tsp (5 ml) dried oregano or thyme, or other herb of choice
  • – 1/4 tsp (1 ml) garlic powder
  • – 1/2 tsp (3 ml) each salt and pepper
  • – Finely chopped parsley


Instructions

  1. Set your oven to a temperature of 425°F/220°C (200°C with fan).
  2. Flatten each chicken breast to approximately 1.5 cm (0.6 inches) at its thickest point using a rolling pin, meat mallet, or even your hand for even cooking and tenderness.
  3. Combine the spices and seasonings together.
  4. Cover a baking tray with foil and parchment paper. Position the chicken breasts on the tray with the smooth side facing down. Pour about 1 teaspoon of olive oil over them and massage it in with your fingers. Sprinkle the spice blend over the chicken.
  5. Turn the chicken over. Pour another teaspoon of olive oil on top, rub it in with your fingers, and cover as much surface area as possible with the spice mix.
  6. Place in the oven for 18 minutes, or until the outside is golden brown as shown in photos and videos, or until the internal temperature reaches 165°F/75°C as checked with a meat thermometer.
  7. Take the chicken out of the oven and immediately move it to serving dishes.
  8. Allow the chicken to rest for 3 to 5 minutes before serving. Optionally, decorate with finely chopped parsley. It can be served alongside Garlic Butter Rice with Kale as shown.
