Ingredients

  • – 2 tablespoons (30 ml) olive oil
  • – 6 (170 g) boneless, skinless chicken breasts
  • – 12 ounces (340 g) fresh or frozen broccoli florets
  • – 1 teaspoon (5 g) Sea Salt
  • – 1/4 teaspoon (1.25 ml) garlic powder
  • – 2 garlic cloves, minced
  • – 1/2 cup (50 g) freshly grated alternative cheese
  • – 1/4 cup (15 g) chopped fresh parsley


Instructions

  1. Set your oven to a temperature of 425°F and lightly coat a baking tray with half of the olive oil.
  2. Place the chicken breasts in the middle of the greased tray and position the broccoli around them.
  3. Pour the rest of the olive oil over the broccoli and sprinkle salt and garlic powder over everything.
  4. Cook in the oven until the chicken is thoroughly done, and a thermometer reads 160°F in the thickest part, which should take about 25 to 30 minutes.
  5. Mix the minced garlic, alternative cheese, and parsley in a small dish.
  6. Spread this mixture over each chicken breast and broil until the cheese has melted and the broccoli is richly browned, about 3 minutes.
  7. Take the tray out of the oven, cover it loosely with foil, and let it sit for 5 minutes before serving.
