Ingredients
- – 2 tablespoons (30 ml) olive oil
- – 6 (170 g) boneless, skinless chicken breasts
- – 12 ounces (340 g) fresh or frozen broccoli florets
- – 1 teaspoon (5 g) Sea Salt
- – 1/4 teaspoon (1.25 ml) garlic powder
- – 2 garlic cloves, minced
- – 1/2 cup (50 g) freshly grated alternative cheese
- – 1/4 cup (15 g) chopped fresh parsley
Instructions
- Set your oven to a temperature of 425°F and lightly coat a baking tray with half of the olive oil.
- Place the chicken breasts in the middle of the greased tray and position the broccoli around them.
- Pour the rest of the olive oil over the broccoli and sprinkle salt and garlic powder over everything.
- Cook in the oven until the chicken is thoroughly done, and a thermometer reads 160°F in the thickest part, which should take about 25 to 30 minutes.
- Mix the minced garlic, alternative cheese, and parsley in a small dish.
- Spread this mixture over each chicken breast and broil until the cheese has melted and the broccoli is richly browned, about 3 minutes.
- Take the tray out of the oven, cover it loosely with foil, and let it sit for 5 minutes before serving.
Notes
- Marinate chicken in olive oil, garlic, parsley before cooking for extra flavor.
- Use a blend of cheddar, mozzarella, parmesan for a more complex cheesy taste.
- Thaw and pat dry frozen broccoli before baking to avoid excess moisture.
