A delicious weeknight dinner featuring golden, crispy Parmesan crusted chicken served with a rich and creamy garlic sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • Fresh parsley for garnish


Instructions

  1. Set up a breading station with three shallow dishes: one for flour (mixed with salt and pepper), one for beaten eggs, and one for a mixture of Parmesan cheese and breadcrumbs.
  2. Dredge each chicken breast in the flour, then dip in the egg, and coat with the Parmesan-breadcrumb mixture.
  3. Heat the olive oil in a skillet over medium heat and sear each chicken breast until golden brown.
  4. Transfer the chicken to the oven and bake at 400°F (200°C) for 15-20 minutes or until the internal temperature reaches 165°F (74°C).
  5. In the same skillet, sauté minced garlic for 2 minutes, then add heavy cream and simmer until thickened.
  6. Serve the chicken topped with the creamy garlic sauce and garnish with fresh parsley.

Notes

For added flavor, consider adding dried herbs to the breadcrumb mixture. Covering the dish with foil during the first half of baking helps retain moisture.
