A flavorful Mexican dish featuring marinated chicken thighs, pineapple, and spices, grilled to perfection.
Ingredients
- 4 boneless, skinless chicken thighs
- 2 tablespoons achiote paste
- 2 tablespoons pineapple juice
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Pineapple slices (for grilling)
- Fresh cilantro (for garnish)
- Corn tortillas (for serving)
Instructions
- In a bowl, mix achiote paste, pineapple juice, lime juice, minced garlic, cumin, oregano, salt, and pepper.
- Add chicken thighs to the marinade and let it sit for at least 30 minutes (or overnight in the refrigerator for more flavor).
- Grill the marinated chicken over medium heat for about 6-7 minutes per side, until cooked through.
- Grill pineapple slices alongside the chicken for a few minutes until charred.
- Once the chicken is done, let it rest and then slice it.
- Serve on warm corn tortillas, topped with grilled pineapple and fresh cilantro.
Notes
