Ingredients
- 3 cups all-purpose flour (360g)
- 1/2 cup white sugar (100g)
- 1/2 teaspoon (3 ml) salt
- 1 cup margarine (226g)
- 1 1/2 cups light corn syrup (360ml)
- 1 1/2 cups white sugar (300g)
- 4 eggs
- 3 tablespoons vegetable oil, melted (42g)
- 1 1/2 teaspoons (8 ml) vanilla extract
- 2 1/2 cups chopped pecans (250g)
Instructions
- Prepare your materials. Set your oven to 350°F (175°C) and let it heat up. Lightly coat a 10×15-inch jellyroll pan with oil.
- In a large mixing bowl, combine the flour, 1/2 cup of sugar, and salt. Incorporate the margarine by cutting it into the dry ingredients until the texture resembles coarse crumbs. Evenly distribute this mixture over the greased pan and press down to form a firm crust. Place in the preheated oven and bake for 20 minutes.
- During this time, in another large bowl, whisk together the corn syrup, 1 1/2 cups of sugar, eggs, melted vegetable oil, and vanilla extract until the blend is smooth. Add the chopped pecans and stir until well combined. Once the crust is out of the oven, spread this filling evenly over it.
- Return to the oven and bake until the filling is firm, approximately 25 minutes. Let it cool fully in the pan on a wire rack before cutting into bars.
