Ingredients

  • 4 chicken breasts, 150 – 180g / 5 – 6 oz each
  • 2 tsp (10 ml) olive oil
  • 1 1/2 tbsp (23 ml) brown sugar
  • 1 tsp (5 ml) paprika
  • 1 tsp (5 ml) dried oregano or thyme, or other herb of choice
  • 1/4 tsp (1 ml) garlic powder
  • 1/2 tsp (3 ml) each salt and pepper
  • Finely chopped parsley


Instructions

  1. Set your oven to a temperature of 425°F (220°C) or 200°C if using a fan.
  2. Flatten the thickest section of the chicken to about 1.5cm (0.6 inches) using a rolling pin, meat mallet, or your fist for uniform cooking and tenderness.
  3. Combine the spices and seasonings together.
  4. Cover a baking tray with foil and parchment paper. Lay the chicken breast side down on the tray. Pour roughly 1 teaspoon of oil over the chicken, then use your fingers to spread it evenly. Sprinkle the seasoning mixture on top.
  5. Turn the chicken over, add another teaspoon of oil, spread with your fingers, and coat with the seasoning mix, ensuring you cover as much of the chicken as possible.
  6. Place in the oven for 18 minutes, or until the outside is golden brown or the internal temperature reaches 165°F (75°C) as checked with a meat thermometer.
  7. Take the chicken out of the oven and promptly move it to serving plates.
  8. Allow the chicken to rest for 3 to 5 minutes before serving. You can garnish with freshly chopped parsley if you like. It’s shown served with Garlic Butter Rice with Kale.
