Ingredients
- 4 chicken breasts, 150 – 180g / 5 – 6 oz each
- 2 tsp (10 ml) olive oil
- 1 1/2 tbsp (23 ml) brown sugar
- 1 tsp (5 ml) paprika
- 1 tsp (5 ml) dried oregano or thyme, or other herb of choice
- 1/4 tsp (1 ml) garlic powder
- 1/2 tsp (3 ml) each salt and pepper
- Finely chopped parsley
Instructions
- Set your oven to a temperature of 425°F (220°C) or 200°C if using a fan.
- Flatten the thickest section of the chicken to about 1.5cm (0.6 inches) using a rolling pin, meat mallet, or your fist for uniform cooking and tenderness.
- Combine the spices and seasonings together.
- Cover a baking tray with foil and parchment paper. Lay the chicken breast side down on the tray. Pour roughly 1 teaspoon of oil over the chicken, then use your fingers to spread it evenly. Sprinkle the seasoning mixture on top.
- Turn the chicken over, add another teaspoon of oil, spread with your fingers, and coat with the seasoning mix, ensuring you cover as much of the chicken as possible.
- Place in the oven for 18 minutes, or until the outside is golden brown or the internal temperature reaches 165°F (75°C) as checked with a meat thermometer.
- Take the chicken out of the oven and promptly move it to serving plates.
- Allow the chicken to rest for 3 to 5 minutes before serving. You can garnish with freshly chopped parsley if you like. It’s shown served with Garlic Butter Rice with Kale.
