Ingredients

  • 2 medium zucchini (about 450 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 pound boneless, skinless chicken breasts (450 g)
  • Salt to taste
  • Black pepper to taste
  • 1 cup basil leaves, packed (about 45 g)
  • 1/4 cup grated mozzarella cheese (25 g)
  • 1/4 cup almonds (about 30 g)
  • 1 clove garlic
  • 1/4 cup olive oil (60 ml)
  • 1 tablespoon lemon juice (15 ml)


Instructions

  1. Wash and dry the zucchini.
  2. Use a spiralizer to turn the zucchini into zoodles.
  3. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  4. Season the chicken breasts with salt and black pepper.
  5. Place the chicken in the skillet and cook for 6-7 minutes on each side.
  6. Remove the chicken from the skillet and let it rest.
  7. In a food processor, combine basil leaves, Parmesan cheese, pine nuts, and garlic.
  8. Pulse until the ingredients are finely chopped.
  9. Gradually add 1/4 cup olive oil while blending until smooth.
  10. Add lemon juice to the pesto and blend briefly.
  11. Slice the cooked chicken into thin strips.
  12. In the same skillet, add the zucchini zoodles.
  13. Cook the zoodles over medium heat for 2-3 minutes until slightly soft.
  14. Add the pesto to the zoodles and stir to combine.
  15. Return the sliced chicken to the skillet and mix with the zoodles and pesto.
  16. Cook for another 2 minutes until heated through.
  17. Adjust seasoning with salt and black pepper as needed.
  18. Serve the Pesto Chicken Zoodles warm.
