Ingredients
- 2 medium zucchini (about 450 g)
- 2 tablespoons olive oil (30 ml)
- 1 pound boneless, skinless chicken breasts (450 g)
- Salt to taste
- Black pepper to taste
- 1 cup basil leaves, packed (about 45 g)
- 1/4 cup grated mozzarella cheese (25 g)
- 1/4 cup almonds (about 30 g)
- 1 clove garlic
- 1/4 cup olive oil (60 ml)
- 1 tablespoon lemon juice (15 ml)
Instructions
- Wash and dry the zucchini.
- Use a spiralizer to turn the zucchini into zoodles.
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and black pepper.
- Place the chicken in the skillet and cook for 6-7 minutes on each side.
- Remove the chicken from the skillet and let it rest.
- In a food processor, combine basil leaves, Parmesan cheese, pine nuts, and garlic.
- Pulse until the ingredients are finely chopped.
- Gradually add 1/4 cup olive oil while blending until smooth.
- Add lemon juice to the pesto and blend briefly.
- Slice the cooked chicken into thin strips.
- In the same skillet, add the zucchini zoodles.
- Cook the zoodles over medium heat for 2-3 minutes until slightly soft.
- Add the pesto to the zoodles and stir to combine.
- Return the sliced chicken to the skillet and mix with the zoodles and pesto.
- Cook for another 2 minutes until heated through.
- Adjust seasoning with salt and black pepper as needed.
- Serve the Pesto Chicken Zoodles warm.
