A sweet and savory weeknight favorite featuring tender chicken, juicy pineapple, and vibrant vegetables over fluffy rice.
Ingredients
- 1 lb chicken breast
- 2 tbsp olive or sesame oil
- 2 cloves garlic, minced
- ½ cup soy sauce
- â…“ cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 1 tsp cornstarch + 1 tbsp water
- 1½ cups cooked rice
- 1 cup pineapple chunks
- ½ red bell pepper, diced
- ¼ cup green onions, chopped
- Optional toppings: sesame seeds, crushed red pepper
Instructions
- Heat olive or sesame oil in a large pan over medium heat.
- Sauté the chicken until browned, about 5-7 minutes.
- Add minced garlic to the pan and sauté for 1 minute.
- Pour in the soy sauce, pineapple juice, honey, and rice vinegar. Stir until well combined.
- Mix cornstarch and water in a bowl until smooth, then add to the sauce. Stir until the sauce thickens.
- Return the chicken to the pan along with pineapple chunks and diced red bell pepper.
- Gently fold in the cooked rice until fully incorporated.
- Serve warm, garnished with green onions and optional toppings.
Notes
For added flavor, marinate the chicken in soy sauce before cooking. Experiment with vegetables like peas or snap peas.
