Description

A sweet and savory weeknight favorite featuring tender chicken, juicy pineapple, and vibrant vegetables over fluffy rice.


Ingredients

  • 1 lb chicken breast
  • 2 tbsp olive or sesame oil
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • â…“ cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch + 1 tbsp water
  • 1½ cups cooked rice
  • 1 cup pineapple chunks
  • ½ red bell pepper, diced
  • ¼ cup green onions, chopped
  • Optional toppings: sesame seeds, crushed red pepper


Instructions

  1. Heat olive or sesame oil in a large pan over medium heat.
  2. Sauté the chicken until browned, about 5-7 minutes.
  3. Add minced garlic to the pan and sauté for 1 minute.
  4. Pour in the soy sauce, pineapple juice, honey, and rice vinegar. Stir until well combined.
  5. Mix cornstarch and water in a bowl until smooth, then add to the sauce. Stir until the sauce thickens.
  6. Return the chicken to the pan along with pineapple chunks and diced red bell pepper.
  7. Gently fold in the cooked rice until fully incorporated.
  8. Serve warm, garnished with green onions and optional toppings.

Notes

For added flavor, marinate the chicken in soy sauce before cooking. Experiment with vegetables like peas or snap peas.
