A delightful combination of tender chicken, fresh pineapple, and fragrant jasmine rice that transforms any dinner into a celebration of flavors.
Ingredients
- 2 cups jasmine rice
- 1 tablespoon vegetable oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup fresh pineapple chunks (or canned, drained)
- 1 small red bell pepper, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 green onions, sliced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Prepare the jasmine rice according to package instructions until fluffy and set it aside to keep warm.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken and season with salt and pepper. Cook the chicken until browned and fully cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add chopped onion and minced garlic. Sauté for 2-3 minutes until they become fragrant and translucent.
- Add the diced red bell pepper and pineapple chunks to the skillet. Cook for another 3-4 minutes until the peppers are tender and the pineapple is warmed through.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, and crushed red pepper flakes if using. Pour this sauce into the skillet with the vegetables and pineapple, stirring well to coat everything evenly.
- Return the cooked chicken to the skillet and stir to combine all ingredients. Let the mixture cook together for 2-3 minutes so the sauce can thicken slightly and flavors meld.
- Spoon the pineapple chicken mixture over the cooked jasmine rice and garnish with sliced green onions. Serve hot and enjoy your delicious meal.
