Description

A vibrant dish combining sweet pineapple, tender chicken, and fluffy jasmine rice, perfect for casual family dinners or cozy gatherings.


Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the cubed chicken breast and cook until it turns golden brown and is fully cooked, about 6-8 minutes.
  3. Remove the chicken from the skillet and set it aside on a plate.
  4. In the same skillet, add the chopped onion, minced garlic, and diced red bell pepper. Sauté until softened, approximately 3-4 minutes.
  5. Add the cubed pineapple to the skillet and cook for an additional 2 minutes.
  6. Stir in jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 18-20 minutes, or until the rice is fully cooked.
  8. Return the cooked chicken to the skillet, mixing well to ensure all ingredients combine.
  9. Heat through for 2-3 minutes.
  10. Serve the dish topped with sliced green onions and sesame seeds for garnish.

For a vegetarian twist, substitute chicken with tofu or experiment with different vegetables for added texture.
