Ingredients
- 1 pound chicken breast, cubed
- 1 cup pineapple, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- 1/4 cup green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the cubed chicken breast and cook until it turns golden brown and is fully cooked, about 6-8 minutes.
- Remove the chicken from the skillet and set it aside on a plate.
- In the same skillet, add the chopped onion, minced garlic, and diced red bell pepper. Sauté until softened, approximately 3-4 minutes.
- Add the cubed pineapple to the skillet and cook for an additional 2 minutes.
- Stir in jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 18-20 minutes, or until the rice is fully cooked.
- Return the cooked chicken to the skillet, mixing well to ensure all ingredients combine.
- Heat through for 2-3 minutes.
- Serve the dish topped with sliced green onions and sesame seeds for garnish.

For a vegetarian twist, substitute chicken with tofu or experiment with different vegetables for added texture.
