Ingredients

  • 1 lb Chicken Breast
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (Minced)
  • 1/2 cup Soy Sauce (Low sodium recommended)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch
  • 1 tbsp Water
  • 1.5 cups Cooked Rice
  • 1 cup Pineapple Chunks
  • 1/2 whole Red Bell Pepper (Diced)
  • 1/4 cup Green Onions (Chopped)
  • Sesame seeds (For serving)
  • Crushed red pepper (Optional)


Instructions

  1. In a bowl, whisk together soy sauce, pineapple juice, honey or brown sugar, rice vinegar, cornstarch, and water until smooth.
  2. Heat the oil in a large skillet over medium-high heat. Add minced garlic and sauté until fragrant.
  3. Add the chicken to the skillet. Cook until nicely browned and cooked through, about 6-7 minutes.
  4. Pour the sauce mixture over the cooked chicken. Stir in pineapple chunks and diced red bell pepper.
  5. Simmer the mixture for 5-7 minutes, allowing the sauce to thicken slightly.
  6. Serve over cooked rice, garnished with green onions and sesame seeds. Enjoy!

Notes

For a juicier dish, consider substituting chicken breast with thighs. Adjust sweetness by varying the honey or brown sugar.
