Ingredients
- 1 lb chicken breast, cut into pieces
- 1 cup pineapple chunks (fresh or canned)
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- Soy sauce to taste
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the onion, bell pepper, and garlic, and sauté until softened.
- Add the chicken pieces, season with salt and pepper, and cook until browned.
- Stir in the rice, pineapple chunks, and chicken broth.
- Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.
- Taste and adjust seasoning with soy sauce. Serve hot.
