A delightful dish combining tender chicken, sweet pineapple, and vibrant mixed vegetables, served over jasmine rice for an exciting weeknight meal.
Ingredients
- 1 lb chicken breasts, cut into bite-sized pieces
- 1 cup pineapple chunks
- 1 cup mixed vegetables (bell peppers, carrots, peas)
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 cups jasmine rice
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Cook jasmine rice according to package instructions and set aside.
- In a large skillet, heat vegetable oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through.
- Add minced garlic and grated ginger to the skillet, cooking for an additional minute.
- Stir in the pineapple chunks and mixed vegetables, cooking until the vegetables are tender.
- Pour in the soy sauce and let everything simmer for 2-3 minutes until heated through.
- Serve the pineapple chicken over a bed of jasmine rice and garnish with chopped green onions.
Notes
Use fresh pineapple for an extra burst of flavor. Add crushed red pepper for spiciness if desired.
