A sweet and savory weeknight favorite that’s easy to prepare and packed with flavor.
Ingredients
- 1 lb chicken breast, cubed
- 2 tbsp olive or sesame oil
- 2 cloves garlic, minced
- ½ cup soy sauce
- â…“ cup pineapple juice
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tsp cornstarch + 1 tbsp water
- 1½ cups cooked rice
- 1 cup pineapple chunks
- ½ red bell pepper, diced
- ¼ cup green onions, chopped
- Optional: sesame seeds, chili flakes for garnish
Instructions
- Sauté the cubed chicken in olive or sesame oil over medium-high heat until browned and cooked through. Set aside.
- Add minced garlic to the same pan and sauté until fragrant.
- Pour in the soy sauce, pineapple juice, honey, and vinegar, then let simmer for a few minutes.
- Combine cornstarch with water to form a slurry and stir into the pan, cooking until the sauce becomes glossy.
- Return the chicken to the pan, add pineapple chunks and diced red bell pepper, and stir well.
- Incorporate the cooked rice and heat through, stirring until everything is combined.
- Garnish with chopped green onions and optional sesame seeds before serving.
Notes
For extra flavor, marinate the chicken in soy sauce before cooking. Fresh pineapple is recommended for the best taste.
