Description
A flavorful and easy-to-make pineapple chicken dish that cooks effortlessly in the crockpot, perfect for busy weeknights.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 medium ripe pineapple, peeled and cut into chunks
- 1/3 cup low-sodium soy sauce
- 1/4 cup brown sugar (preferably dark)
- 4 cloves garlic, crushed
- 1 tablespoon fresh ginger, grated
- 2 green onions, sliced (for garnish)
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Cut the chicken into bite-sized pieces and chop the pineapple.
- Place the chicken at the bottom of the crockpot.
- Layer the pineapple, garlic, ginger, soy sauce, and brown sugar on top of the chicken.
- Gently stir to combine all ingredients in the crockpot.
- Cover and cook on low for 4-6 hours until the chicken is tender.
- Check for doneness; the chicken should shred easily.
- Just before serving, sprinkle with green onions.
Notes
For a pop of heat, add optional red pepper flakes. Adjust sweetness as desired.
