Description

A flavorful and easy-to-make pineapple chicken dish that cooks effortlessly in the crockpot, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 medium ripe pineapple, peeled and cut into chunks
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar (preferably dark)
  • 4 cloves garlic, crushed
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, sliced (for garnish)
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Cut the chicken into bite-sized pieces and chop the pineapple.
  2. Place the chicken at the bottom of the crockpot.
  3. Layer the pineapple, garlic, ginger, soy sauce, and brown sugar on top of the chicken.
  4. Gently stir to combine all ingredients in the crockpot.
  5. Cover and cook on low for 4-6 hours until the chicken is tender.
  6. Check for doneness; the chicken should shred easily.
  7. Just before serving, sprinkle with green onions.

Notes

For a pop of heat, add optional red pepper flakes. Adjust sweetness as desired.
