Description

Sizzling chicken skewers drizzled with a sweet and savory marinade, combining juicy chicken breast, vibrant bell peppers, and tropical pineapple chunks for a delightful meal.


Ingredients

  • 2 lbs chicken breast, cubed
  • 1 cup pineapple chunks (fresh or canned)
  • 2 bell peppers, chopped (any color)
  • 1/2 cup soy sauce
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 inches ginger, minced
  • Salt and pepper to taste
  • Skewers (wooden or metal)


Instructions

  1. In a bowl, mix soy sauce, olive oil, garlic, ginger, salt, and pepper to create a marinade.
  2. Add the cubed chicken to the marinade and let it sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken, pineapple chunks, and bell peppers onto the skewers alternately.
  5. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Serve the kabobs with rice or a fresh salad.

Notes

Soak wooden skewers in water for at least 30 minutes to prevent burning on the grill. Allow skewers to rest after grilling to keep juices locked in.
