Ingredients
- 2 lbs chicken breast, cubed
- 1 cup pineapple chunks (fresh or canned)
- 2 bell peppers, chopped (any color)
- 1/2 cup soy sauce
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 2 inches ginger, minced
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, mix soy sauce, olive oil, garlic, ginger, salt, and pepper to create a marinade.
- Add the cubed chicken to the marinade and let it sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, pineapple chunks, and bell peppers onto the skewers alternately.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Serve the kabobs with rice or a fresh salad.
Notes
