Description

A quick and delightful weeknight dinner featuring juicy chicken, colorful vegetables, and sweet pineapple, all stir-fried to perfection.


Ingredients

  • 1 lb chicken (cut into bite-sized pieces)
  • 1 cup chopped bell peppers (any color)
  • 1 cup broccoli florets
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 1 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tbsp ginger (grated)


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Add chicken and cook until browned.
  4. Stir in bell peppers and broccoli; cook for 3-5 minutes until tender.
  5. Add pineapple chunks and pineapple juice, stirring well.
  6. Drizzle with soy sauce and sprinkle with sesame seeds.
  7. Cook for an additional 2-3 minutes, then serve hot.
