Ingredients
- 1 lb chicken (cut into bite-sized pieces)
- 1 cup chopped bell peppers (any color)
- 1 cup broccoli florets
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup pineapple juice
- 1 tbsp sesame seeds
- 2 tbsp soy sauce
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tbsp ginger (grated)
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add chicken and cook until browned.
- Stir in bell peppers and broccoli; cook for 3-5 minutes until tender.
- Add pineapple chunks and pineapple juice, stirring well.
- Drizzle with soy sauce and sprinkle with sesame seeds.
- Cook for an additional 2-3 minutes, then serve hot.
Notes
For enhanced flavor, you can marinate the chicken in soy sauce and pineapple juice for 15-30 minutes before cooking.
