Ingredients
- 2 cups grilled chicken, diced
- 1 cup fresh pineapple, diced
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 8 small corn or flour tortillas
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Grill the chicken until cooked through, then let it rest and dice into bite-sized pieces.
- In a bowl, combine the grilled chicken, diced pineapple, red onion, cilantro, lime juice, salt, and pepper.
- Warm the tortillas on the grill for about 30 seconds on each side.
- Fill each tortilla with the chicken and pineapple mixture.
- Serve immediately with additional lime wedges and cilantro if desired.
