Description

Sweet and savory Pineapple Chicken transforms ordinary chicken into a tropical delight, perfect for bringing family together.


Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 cup fresh or canned pineapple chunks
  • ½ cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon olive oil
  • Optional: 1 bell pepper, sliced; 1 onion, sliced; garlic for additional flavor


Instructions

  1. Preheat your oven to 375°F (190°C) or prepare your grill.
  2. In a bowl, mix soy sauce, honey, and olive oil to create a marinade.
  3. Add chicken pieces to the marinade, ensuring they are well-coated.
  4. Allow the chicken to marinate for at least 30 minutes to enhance flavors.
  5. If using vegetables, sauté them in a pan for a few minutes until slightly softened.
  6. Place marinated chicken and any vegetables in a baking dish or directly on the grill.
  7. Add pineapple chunks on top or around the chicken.
