- 1 pound boneless, skinless chicken breasts or thighs
- 1 cup fresh or canned pineapple chunks
- ½ cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon olive oil
- Optional: 1 bell pepper, sliced; 1 onion, sliced; garlic for additional flavor
Instructions
- Preheat your oven to 375°F (190°C) or prepare your grill.
- In a bowl, mix soy sauce, honey, and olive oil to create a marinade.
- Add chicken pieces to the marinade, ensuring they are well-coated.
- Allow the chicken to marinate for at least 30 minutes to enhance flavors.
- If using vegetables, sauté them in a pan for a few minutes until slightly softened.
- Place marinated chicken and any vegetables in a baking dish or directly on the grill.
