Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • 1 to 2 cups fresh pineapple, sliced
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh herbs (like cilantro or parsley) for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix soy sauce, brown sugar, minced garlic, grated ginger, olive oil, salt, and pepper to create a marinade.
  3. Place the chicken in a shallow dish and pour the marinade over it, ensuring all parts are well-coated. Let it marinate for about 30 minutes.
  4. Arrange the pineapple slices around and on top of the chicken in the baking dish.
  5. Roast in the preheated oven for about 1.5 hours, basting occasionally with the pan juices.
  6. Check the internal temperature; it should reach 165°F (75°C).
  7. Once done, remove from the oven and let it rest for a few minutes before serving.

Notes

To keep the chicken moist, baste it with the pan juices during roasting. For added flavor, consider adding more ginger or garlic to the marinade.
