Ingredients
- 1 whole chicken (about 4-5 pounds)
- 1 to 2 cups fresh pineapple, sliced
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh herbs (like cilantro or parsley) for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix soy sauce, brown sugar, minced garlic, grated ginger, olive oil, salt, and pepper to create a marinade.
- Place the chicken in a shallow dish and pour the marinade over it, ensuring all parts are well-coated. Let it marinate for about 30 minutes.
- Arrange the pineapple slices around and on top of the chicken in the baking dish.
- Roast in the preheated oven for about 1.5 hours, basting occasionally with the pan juices.
- Check the internal temperature; it should reach 165°F (75°C).
- Once done, remove from the oven and let it rest for a few minutes before serving.
