Ingredients
- 2 boneless skinless chicken breasts
- 1 cup buttermilk

- 1 tsp cayenne pepper
- ½ cup mayo
- 1 tsp hot sauce

Instructions
- Marinate chicken breasts in buttermilk and season with paprika, garlic powder, black pepper, and salt. Refrigerate for at least 1 hour.
- In a separate bowl, mix flour, corn starch, and spices for the breading.
- Heat oil in a deep fryer or large skillet.
- Dredge marinated chicken breasts in the flour mixture, ensuring they are well coated.
- Fry the chicken until golden brown and cooked through, about 5-7 minutes per side.
- For the spicy mayo, mix mayo, hot sauce, paprika, cajun seasoning, and garlic powder together.
- Assemble the sandwich by placing the fried chicken on a bun and topping with spicy mayo.
Notes
For optimal frying, maintain the oil temperature at around 350°F to 375°F. Don’t overcrowd the pan and let the fried chicken rest on a wire rack post-frying.
