Description

Ingredients

  • 1 1/2 tsp paprika (7.5 ml)
  • 2 tbsp olive oil or vegetable oil (30 ml)
  • 2 tsp dry mustard (10 g)
  • 1 tsp fresh lemon juice (5 ml)
  • 1/2 tsp salt (2.5 g)
  • 1 tsp dried oregano (1 g)
  • 1/2 tsp dried thyme (0.5 g)
  • 2 tbsp hot sauce (30 ml) – add extra sauce if you want to increase the spice level
  • 8 boneless skinless chicken thighs or 8 chicken drumsticks
  • OR a flattened chicken


Instructions

  1. Mix all the marinade components in a large bowl until it forms a red paste-like consistency.
  2. Place the chicken into the mixture, ensuring each piece is thoroughly covered. (Large plastic bags are great for marinating meats, but you can also use a sealed container.)
  3. Allow the chicken to soak in the marinade for at least 45 minutes.
  4. Grill the chicken on a barbecue until it is thoroughly cooked through (refer to Note 2). For chicken drumsticks, use a cooking thermometer to ensure the internal temperature has reached 77°C (170°F).
  5. Prepare a double batch of the marinade ingredients and blend them into a red paste consistency.
  6. Set your oven to 375°F for preheating.
  7. Line a Pyrex dish with parchment paper and arrange the chicken on top.
  8. Generously apply the marinade to the chicken, making sure to get some between the skin and the meat if possible.
  9. Optionally, place a chopped onion at the bottom of the dish.
  10. Pour a cup of water into the dish’s base to create steam, keeping the chicken moist and tender.
  11. Roast the chicken in the oven for 45 minutes to an hour, until the skin becomes crispy and golden, and the meat easily detaches from the thigh bone. A meat thermometer inserted in the center can verify proper cooking.

Notes

  • For a spicier taste, increase the hot sauce or add a dash of cayenne pepper to the marinade.
  • Mix chicken thighs and drumsticks for varied textures in the dish.
  • Ensure even cooking and charring by flipping and rotating the chicken pieces while grilling.
