Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Add garlic and ginger, stirring until fragrant.
  4. Toss in mixed vegetables and pineapple chunks; stir-fry for another 3-4 minutes until vegetables are tender-crisp.
