A quick and easy stir-fry featuring juicy chicken, sweet pineapple, and crunchy mixed vegetables, perfect for busy weeknights.
Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- Add garlic and ginger, stirring until fragrant.
- Toss in mixed vegetables and pineapple chunks; stir-fry for another 3-4 minutes until vegetables are tender-crisp.
- Drizzle soy sauce and hoisin sauce over the mix, stirring to combine.
- Season with salt and pepper to taste.
- Serve hot over cooked rice.
