Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 1 cup (240 ml) orzo pasta (200 grams)
  • 1 tablespoon (15 ml) vegetable oil (15 milliliters)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14.5 ounces (411 g)) (410 grams)
  • 1 cup (240 ml) beef broth (240 milliliters)
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup (120 ml) grated cheddar cheese (50 grams)
  • Chopped fresh parsley for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and cook until soft, about 3 minutes.
  3. Stir in the minced garlic and cook for 1 minute.
  4. Add the ground turkey to the skillet and cook until browned, breaking up the meat as it cooks.
  5. Add the diced bell pepper and cook for another 2 minutes.
  6. Stir in the can of diced tomatoes, including the juice.
  7. Add the orzo pasta to the skillet.
  8. Pour in the chicken broth and stir to combine.
  9. Season with dried oregano, dried basil, salt, and black pepper.
  10. Bring the mixture to a boil, then reduce heat to low and cover.
  11. Simmer for 10-12 minutes, stirring occasionally, until the orzo is tender.
  12. Remove from heat and stir in the grated Parmesan cheese.
  13. Let the dish sit for a few minutes to thicken.
  14. Garnish with chopped fresh parsley before serving.
