- 1 cup (240 ml) orzo pasta (200 grams)
- 1 tablespoon (15 ml) vegetable oil (15 milliliters)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14.5 ounces (411 g)) (410 grams)
- 1 cup (240 ml) beef broth (240 milliliters)
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt, to taste
- Black pepper, to taste
- 1/2 cup (120 ml) grated cheddar cheese (50 grams)
- Chopped fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and cook until soft, about 3 minutes.
- Stir in the minced garlic and cook for 1 minute.
- Add the ground turkey to the skillet and cook until browned, breaking up the meat as it cooks.
- Add the diced bell pepper and cook for another 2 minutes.
- Stir in the can of diced tomatoes, including the juice.
- Add the orzo pasta to the skillet.
- Pour in the chicken broth and stir to combine.
- Season with dried oregano, dried basil, salt, and black pepper.
- Bring the mixture to a boil, then reduce heat to low and cover.
- Simmer for 10-12 minutes, stirring occasionally, until the orzo is tender.
- Remove from heat and stir in the grated Parmesan cheese.
- Let the dish sit for a few minutes to thicken.
