Description

A comforting and versatile rice noodle stir-fry that brings together a mix of vegetables, protein, and savory sauces for a flavorful meal.


Ingredients

  • 8 ounces rice noodles
  • 1 tablespoon vegetable oil
  • 1 cup protein of choice (chicken, shrimp, or tofu)
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the protein and cook until browned and cooked through, about 5-7 minutes.
  4. Add the mixed vegetables and minced garlic, stirring constantly for 3-4 minutes until the veggies are tender.
  5. Stir in the cooked rice noodles, soy sauce, oyster sauce (if using), salt, and pepper.
  6. Toss everything together until well combined and heated through.
  7. Serve hot, garnished with green onions.
