A comforting and versatile rice noodle stir-fry that brings together a mix of vegetables, protein, and savory sauces for a flavorful meal.
Ingredients
- 8 ounces rice noodles
- 1 tablespoon vegetable oil
- 1 cup protein of choice (chicken, shrimp, or tofu)
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the protein and cook until browned and cooked through, about 5-7 minutes.
- Add the mixed vegetables and minced garlic, stirring constantly for 3-4 minutes until the veggies are tender.
- Stir in the cooked rice noodles, soy sauce, oyster sauce (if using), salt, and pepper.
- Toss everything together until well combined and heated through.
- Serve hot, garnished with green onions.
