A delicious chipotle roast chicken recipe that showcases smoky chipotle flavors combined with zesty lime and orange for an unforgettable dining experience.
Ingredients
- 3 pounds boneless skinless chicken thighs (or chicken breast sliced in half)
- 2 tsp olive oil
- 4-5 tbsp water (optional for pan frying)
- 1 can (7 oz) chipotle peppers in adobo sauce
- 4 tbsp fresh lime juice
- 4 tbsp fresh orange juice
- 1/2 cup fresh cilantro
- 6 garlic cloves
- 1 medium onion, quartered
- 1 tsp cumin
- 1 tbsp dried oregano
- 1 tsp ground coriander (optional)
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Blend onion, garlic, chipotle peppers, lime juice, orange juice, cilantro, cumin, oregano, coriander, smoked paprika, salt, and pepper in a mixing bowl until smooth.
- Marinate the chicken in the mixture for at least 30 minutes, preferably overnight in the refrigerator.
- For grilled chicken: Preheat grill to medium-high heat, cook chicken for 6-7 minutes per side until internal temperature reaches 165°F.
- For pan-seared chicken: Heat olive oil in a skillet, cook chicken for about 6-7 minutes per side until cooked through.
- For air-fried chicken: Preheat air fryer to 370°F, cook chicken for 12-15 minutes, flipping halfway through.
- Let chicken rest for a few minutes before slicing and serving.
