Description

A delicious chipotle roast chicken recipe that showcases smoky chipotle flavors combined with zesty lime and orange for an unforgettable dining experience.


Ingredients

  • 3 pounds boneless skinless chicken thighs (or chicken breast sliced in half)
  • 2 tsp olive oil
  • 4-5 tbsp water (optional for pan frying)
  • 1 can (7 oz) chipotle peppers in adobo sauce
  • 4 tbsp fresh lime juice
  • 4 tbsp fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion, quartered
  • 1 tsp cumin
  • 1 tbsp dried oregano
  • 1 tsp ground coriander (optional)
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp pepper


Instructions

  1. Blend onion, garlic, chipotle peppers, lime juice, orange juice, cilantro, cumin, oregano, coriander, smoked paprika, salt, and pepper in a mixing bowl until smooth.
  2. Marinate the chicken in the mixture for at least 30 minutes, preferably overnight in the refrigerator.
  3. For grilled chicken: Preheat grill to medium-high heat, cook chicken for 6-7 minutes per side until internal temperature reaches 165°F.
  4. For pan-seared chicken: Heat olive oil in a skillet, cook chicken for about 6-7 minutes per side until cooked through.
  5. For air-fried chicken: Preheat air fryer to 370°F, cook chicken for 12-15 minutes, flipping halfway through.
  6. Let chicken rest for a few minutes before slicing and serving.
